My husband and I love to cook and entertain, and both needed to lose weight. We are now living low-carb, thanks to Fran. Her recipes for mashed potatoes (made from cauliflower) and fettucine (made from zucchini) are SO good, we make them and serve them at dinner parties, without even telling people we are on a low-carb diet. And EVERYONE asks for these recipes!I have given up low-fat eating, dropped weight, watched my cholesterol drop, and am amazed! My husband never thought he'd be able to give up pasta or potatoes, but he says he prefers Fran's recipes using substitutes! I have e-mailed Fran with questions and have gotten answers quickly. She is a writer who truly believes in what she is writing about, and like so many Americans, struggles with her weight. This is a wonderful book. And she is a wonderful writer and an even better cook!

Some of the recipes in this book are keepers, but a lot of them make you wonder if they've really thought through the low-carb idea. For instance, there's a recipe for "Glazed Bananas." Bananas by themselves are off-limits for most low-carbers, but this recipe suggests adding honey to the mix. At 20 carbs per serving this treat is described as "moderate."
Nutritional reporting is minimal. No calorie counts are reported for recipes. Carb counts include fiber, and fiber is not reported on its own, so good luck figuring out net impact carbs.
Dana Carpender's 500 Low-Carb Recipes is a much better bet.

Without going into too many details, let me just say that THIS COOKBOOK is the only reason my wife and I are still on the Atkins diet. We bought four cookbooks (all highly recommended), only to find that, while providing tasty recipes, three of the cookbooks asked for all manner of "fancy" ingredients. Stuff not normally found in our "average" kitchen. Expensive stuff. And many of the recipes weren't quite as low-carb as we had hoped (20g for one serving?).
Lauri's cookbook took care of those problems. I think the only "fancy" ingredients we had problems with were Kitchen Bouquet (it was in the gravy section at the store) and shallots (never had one before). The rest is just plain, everyday ingredients. And low-carb? All of her recipes list the nutritional information right there. It's nice to eat a large, tasty dinner with only 2.3g per serving! Most of the recipes are below 10g, and many are below 5g. Serving size is very generous.
I consider this book to be the best diet/way-of-eating investment I've made so far. This cookbook is just too good to pass up.

I was a little reluctant to purchase yet another low carb cookbook when I happened upon this one while browsing. I picked it up, looked through it, put it back, moved on and came back to it later. Am I ever glad I did! This book is the best low carb cookbook that I've ever owned, bar none, and I own quite a selection. I was pleasantly surprised to see that the recipes are "new" (you won't find a single cheesecake recipe), and that the ingredients could be purchased in any local grocery store. The format is enjoyable to simply read, for those cookbook lovers like myself who can spend an evening reading recipes! All recipes I have tried thus far have been very good; I wouldn't think twice about making them for guests as well.
